My family has a couple of traditions that we all look forward to. Another tradition that my husband & I have started is that we make enchiladas for our Christmas Eve dinner. My husband is chicano (US born, Mexican parents). The Mexican tradition is to make tamales, but neither my husband nor myself have nearly enough time or patience to spend an entire day in the kitchen making one meal...and we all LOVE enchiladas & hardly ever make them, so that has become our special meal.
