Our human body is a wonderful machine which processes earthly substances into nutrients for growth and self-survival, thus giving it the longevity needed as a host for our soul. When this body dies, the soul moves on, no longer needing the rotting cadaver, or the earthly life-support system, which is left behind. Such a discarded thing cannot be the image of God. It is far more likely that "God created man in His own image" refers to the composition of our souls (spirits, if you like).
