By buffalo, I think many Americans are referring to Bison. Does that include you? I had a bison ribeye steak at the Luxor. They said it has less marbling than beef. That was true. They said it should be cooked a little more rare than beef to keep it tender. I don't cook my steak past medium-rare anyway. And I thought it was really good.

So good, I got another one the next night. First one was a comp, so it was an easy choice.
